Tourlou Tourlou / Briam (Greek Roasted Vegetables)


Ingredients:

Vegetables:

  • 2 potatoes, sliced
  • 1 large sweet potato, sliced
  • 1 large eggplant, diced
  • 1 onion, sliced
  • 1 large zucchini, diced thick
  • 2 carrots, sliced
  • feta cheese to top

Sauce:

  • 15 oz crushed tomatoes
  • 1/2 cup olive oil
  • 1/2 tsp oregano
  • salt and pepper
  • 3/4 cup water

Directions:

  1. Preheat oven to 350°.
  2. Arrange vegetables in large baking pan.
  3. Combine all ingredients for sauce, then pour over the vegetables. Mix.
  4. Cover pan tightly with baking paper topped with aluminum foil.
  5. Bake 40 min, or until potatoes are cooked.
  6. Uncover and bake an additional 15-20 min to develop color.
  7. Drizzle with olive oil and sprinkle with feta.
