Jamaican Chicken Curry


Ingredients:

For the Chicken:

  • 3 lbs chicken
  • 2 Tb curry powder
  • 1 Tb adobo seasoning
  • 1 tsp allspice
  • 1 tsp thyme
  • 1 tsp turmeric
  • salt and pepper to taste (1 tsp salt, 1/2 tsp pepper)

For the Curry:

  • 2 Tb olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper
  • 1/4 cup green onions
  • 4 cloves garlic
  • 2 Tb ginger
  • 2 Tb curry powder
  • 1 cup coconut milk
  • 1 lb yellow potatoes
  • 1 carrot
  • 1/2 to 1 cup chicken broth (optional, but makes more sauce)
  • 1/2 bunch parsley
  • salt and pepper to taste

Directions:

  • Saute onions and pepper until soft.
  • Add garlic, green onions, and spices. Cook 2-3 minutes, stirring frequently.
  • Add chicken. Cook 10 min until done.
  • Add coconut milk, chicken broth, potatoes, and carrots. Bring to boil, cover, and simmer 20-30 min.
  • Add parsley and serve.
