===== Ingredients: =====

==== Vegetables: ====
  * 2 potatoes, sliced
  * 1 large sweet potato, sliced
  * 1 large eggplant, diced
  * 1 onion, sliced
  * 1 large zucchini, diced thick
  * 2 carrots, sliced
  * feta cheese to top

==== Sauce: ====
  * 15 oz crushed tomatoes
  * 1/2 cup olive oil
  * 1/2 tsp oregano
  * salt and pepper
  * 3/4 cup water

===== Directions: =====
  - Preheat oven to 350°.
  - Arrange vegetables in large baking pan.
  - Combine all ingredients for sauce, then pour over the vegetables.  Mix.
  - Cover pan tightly with baking paper topped with aluminum foil.
  - Bake 40 min, or until potatoes are cooked.
  - Uncover and bake an additional 15-20 min to develop color.
  - Drizzle with olive oil and sprinkle with feta.
