Napolitan (Japanese Spaghetti)
Ingredients:
- 1 lb kielbasa or smoked sausage, sliced into half-moons
- 1 green pepper, sliced
- 1/2 medium onion, sliced
- 3 cloves garlic
- 2 Tb butter
- 1/4 cup plus 1 Tb ketchup, divided
- 2 Tb oyster sauce
- 1 tsp Tabasco
- 2 Tb olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb spaghetti
- Parmesan cheese
Directions:
- Melt 1 Tb butter. Combine with 1/4 cup ketchup, 2 Tb oyster sauce, and 1 tsp Tabasco.
- Heat oil and cook garlic, 30 sec. Add onion and kielbasa. Cook until onion is translucent. Add green pepper, salt, and pepper. Cook until pepper softens.
- Push mixture to sides of pan. Add sauce and let cook, undisturbed, 30 sec. Mix contents together and simmer 3-5 minutes until thickened. Remove from heat.
- Toss with spaghetti, 1/2 cup pasta water, 1 Tb butter, and 1 Tb ketchup.
- Serve topped with Parmesan cheese.
