====== Jamaican Chicken Curry ======

===== Ingredients: =====

==== For the Chicken: ====
  * 3 lbs chicken
  * 2 Tb curry powder
  * 1 Tb adobo seasoning
  * 1 tsp allspice
  * 1 tsp thyme
  * 1 tsp turmeric
  * salt and pepper to taste (1 tsp salt, 1/2 tsp pepper)

==== For the Curry: ====
  * 2 Tb olive oil
  * 1 onion, chopped
  * 1 bell pepper, chopped
  * 1 scotch bonnet pepper
  * 1/4 cup green onions
  * 4 cloves garlic
  * 2 Tb ginger
  * 2 Tb curry powder
  * 1 cup coconut milk
  * 1 lb yellow potatoes
  * 1 carrot
  * 1/2 to 1 cup chicken broth (optional, but makes more sauce)
  * 1/2 bunch parsley
  * salt and pepper to taste

===== Directions: =====
  * Saute onions and pepper until soft.
  * Add garlic, green onions, and spices.  Cook 2-3 minutes, stirring frequently.
  * Add chicken.  Cook 10 min until done.
  * Add coconut milk, chicken broth, potatoes, and carrots.  Bring to boil, cover, and simmer 20-30 min.
  * Add parsley and serve.
