New England Horseradish Bean Dip
Ingredients:
- 1 16-oz. can kidney beans
- 1 cup sweet relish
- 1/2 cup mayonnaise
- 1/2 tsp black pepper
- 1 Tb horseradish
- 3 large cloves garlic
- 1 small onion
- 2 tsp salt
- 1/2 tsp dry mustard
Directions:
- Drain beans and relish but SAVE the liquid. Do not rinse.
- Combine the rest of the ingredients in a blender BRIEFLY until roughly chopped. Do not overblend; mixture should be quite chunky.
- Add beans and relish.
- Add reserved liquid to desired consistency.
- Cover and let sit overnight. Serve on Triscuit crackers.
