New England Horseradish Bean Dip


Ingredients:

  • 1 16-oz. can kidney beans
  • 1 cup sweet relish
  • 1/2 cup mayonnaise
  • 1/2 tsp black pepper
  • 1 Tb horseradish
  • 3 large cloves garlic
  • 1 small onion
  • 2 tsp salt
  • 1/2 tsp dry mustard

Directions:

  1. Drain beans and relish but SAVE the liquid. Do not rinse.
  2. Combine the rest of the ingredients in a blender BRIEFLY until roughly chopped. Do not overblend; mixture should be quite chunky.
  3. Add beans and relish.
  4. Add reserved liquid to desired consistency.
  5. Cover and let sit overnight. Serve on Triscuit crackers.
