Jambalaya


Ingredients:

Creole Seasoning:

  • 2.5 Tb paprika
  • 2 Tb salt
  • 2 Tb garlic powder
  • 1 Tb pepper
  • 1 Tb onion powder
  • 1 Tb cayenne
  • 1 Tb oregano
  • 1 Tb thyme

Jambalaya:

  • 12 shrimp, chopped
  • 4 oz. chicken, diced.
  • 1 Tb creole seasoning (above)
  • 2 Tb olive oil
  • 1/4 cup chopped onion
  • 1/4 cup green pepper
  • 1/4 cup celery
  • 2 Tb garlic
  • 1/2 cup tomato
  • 3 bay leaves
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce
  • 3/4 cup rice
  • 3 cups chicken stock
  • 5 oz sausage

Directions:

  1. Combine meats and seasoning.
  2. Fry onion, pepper, and celery, 3 min.
  3. Add garlic, tomato, bay leaves, Worcestershire, and hot sauce.
  4. Add rice and broth.
  5. Cook 15 min.
  6. Add meats, cook 10 min.
