haitian_spaghetti

Haitian Spaghetti (Espageti)


Ingredients:

For the epis (makes ~2 cups):

  • 1 cup parsley
  • 5 Tb garlic
  • 1 onion
  • 1 green pepper
  • 3 green onions
  • 2 cubes chicken bouillon
  • 1 tsp thyme
  • 2 Tb lime juice
  • 1/4 cup olive oil
  • 1 Tb vinegar
  • 1 tsp salt

For the spaghetti:

  • 2 cups epis
  • 2 green peppers
  • 1 onion
  • 1 lb spaghetti
  • 24 oz kielbasa, sliced
  • 28 oz tomato sauce
  • 2 Tb ketchup
  • 1/4 tsp clove
  • 1 tsp pepper

Directions:

  1. Cook pepper and onion. Add kielbasa.
  2. Add epis. Cook 3 min and stir.
  3. Add tomato sauce and ketchup.
  4. Add clove and pepper.
  5. Serve over spaghetti.
