Haitian Spaghetti (Espageti)
Ingredients:
For the epis (makes ~2 cups):
- 1 cup parsley
- 5 Tb garlic
- 1 onion
- 1 green pepper
- 3 green onions
- 2 cubes chicken bouillon
- 1 tsp thyme
- 2 Tb lime juice
- 1/4 cup olive oil
- 1 Tb vinegar
- 1 tsp salt
For the spaghetti:
- 2 cups epis
- 2 green peppers
- 1 onion
- 1 lb spaghetti
- 24 oz kielbasa, sliced
- 28 oz tomato sauce
- 2 Tb ketchup
- 1/4 tsp clove
- 1 tsp pepper
Directions:
- Cook pepper and onion. Add kielbasa.
- Add epis. Cook 3 min and stir.
- Add tomato sauce and ketchup.
- Add clove and pepper.
- Serve over spaghetti.
