Haitian Chicken
Ingredients:
Directions:
- Brown chicken in very hot oil.
- Add epis, onion, red pepper, and black pepper. Continue to cook until thick and starting to stick to bottom of pan.
- Add wine and scrape bottom of pan. Cook until mostly reduced.
- Add tomato paste and chicken broth. Cover and simmer 30-45 min.
- Serve over rice (~1 cup uncooked rice).
