Creole Sauce
Ingredients:
Seasoning Mix:
- 2 bay leaves
- 3/4 tsp oregano
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1/2 tsp red pepper
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1/2 tsp basil
Vegetables:
- 4 Tb butter
- 1 cup peeled & chopped tomatoes
- 3/4 cup chopped onions
- 3/4 cup chopped celery
- 3/4 cup chopped green peppers
- 1 1/2 tsp minced garlic
- 1 1/4 cups chicken broth
- 1 cup canned tomato sauce
- 1 tsp sugar
- 1/2 tsp Tabasco
Directions:
- Combine seasoning mix and set aside.
- Melt butter in pan. Saute tomatoes, onions, celery, and green peppers until onions are translucent.
- Add garlic and seasoning mix. Cook 1-2 min.
- Stir in chicken broth, tomato sauce, sugar, and Tabasco. Bring to boil, then simmer over low heat 20 minutes.
