Creole Sauce


Ingredients:

Seasoning Mix:

  • 2 bay leaves
  • 3/4 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp red pepper
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1/2 tsp basil

Vegetables:

  • 4 Tb butter
  • 1 cup peeled & chopped tomatoes
  • 3/4 cup chopped onions
  • 3/4 cup chopped celery
  • 3/4 cup chopped green peppers
  • 1 1/2 tsp minced garlic
  • 1 1/4 cups chicken broth
  • 1 cup canned tomato sauce
  • 1 tsp sugar
  • 1/2 tsp Tabasco

Directions:

  1. Combine seasoning mix and set aside.
  2. Melt butter in pan. Saute tomatoes, onions, celery, and green peppers until onions are translucent.
  3. Add garlic and seasoning mix. Cook 1-2 min.
  4. Stir in chicken broth, tomato sauce, sugar, and Tabasco. Bring to boil, then simmer over low heat 20 minutes.
