  - Slice the top of the potatoes in an "X" pattern 1/4 in. across.
  - Bake at 400 F for 2 hours.
  - Cut deeper into the "X" and return to the oven for 10 more minutes.
  - Top with whatever -- gravy, meat, sauce, stew... the classic is baked beans & cheese, apparently.
